How can I change an album's name?

In the "Location" tree I have an album with this name: Elvis Presley - The Complete 50's Masters Disc 1.

I would like to change the name to: Elvis Presley - The Complete 50's Masters (Disc 1 of 5)

How is the best way to accomplish this?

Where can I find information that will help me understand the relationship between the "Library" and "My Computer". I find the folders and contents confusing and do not seem to have the same names.

Well FreeDB is fine as long as you have a fairly "mainstream" collection. Compilation albums can be difficult - but there are scripts to help fix this data. Just curious - why did you choose 48,000Hz? CD's are recorded at 44.1kHz. You aren't gaining anything by encoding them at a higher sampling rate.
