I have version 4.1.0.1692 Gold.
I have about 500 music CD's in my collection. I would like to make it so that when I put a CD in my optical drive that it automatically rips the music to my Media Monkey library (or any folder on my hard drive) without having to go: Media tab/Convert/Save/up arrow, track position to 1, Convert/Save button/Open Media window/Convert, select codec.
How is this done simply by putting my CD in without going through all this extra effort for each and every CD?

You'd use Tools > Rip Audio CD, not convert. This topic has been discussed a couple times, don't believe it's possible.
