MP3s Deleted Immediately After Ripping Them

I'm trying to rip some MP3s for the first time using Media Monkey Gold. The files are being created, but then are immediately deleted.

Has anyone else had this problem? Any ideas how this is happening and what can be done to stop it?

I've no such problems at my side, MP3's are created and stay in the folder. MM can add the converted file to the database by using the File Monitor or the option in the Convert Tracks window. You may have used the Auto Organize option and ticked the Automatically Organize Tracks box there too. The result of both functionalities would be that the newly created MP3 files would be move to another folder but for you it looks like the file is deleted. That's the only idea I'm having there.
