Oh, and if it matters, I don't have any music at all in my iTunes library, since I didn't want it messing with the tags that MM puts in the song files.

Just an update, using Paul-B_UK's suggestion, I uninstalled iTunes and MM, deleted the files or folders that I could find in those areas (i'm on XP SP2) then reinstalled a fresh version of the latest MM and iTunes. Did NOT restore my iPod this time, but the album art issue is gone, except for the usual iTunes VS MM artwork issue. I can sync apps and whatever to my iPod as long as there's no music on it, and then sync the music on using MM and everything works just fine.
