Check under the "Entire Library" collection rather than the "Music" one.

This isn't a bug, there is a different layout for the properties window depending on which "Type" is selected for any particular track (eg. Music, Classical Music, Video, Podcast, etc.)

You can use the MagicNodes addon to show you this, there is a preset for it.

I don't think MMA supports voice control.

I do not use Plex but I do use Emby. I am extremely impressed with Emby and it's availability on other platforms, and the ease-of-use. I have not tried Plex, but as I understand it is very similar to Emby. Emby is open-source, which is why I decided to try that first over Plex. I am still using MMW ...
