I made a couple of small changes to a couple of tracks outside of MediaMonkey and lost the play data.
I managed to change the Played number using Add-Remove PlayStat, but am I able to also change the Added date to bring the tracks into line with the rest of the tracks on the album?

Each change to filenames outside MMW will tell MMW that it is new tracks and thus you loose stats.

You can do that with RegExp Find & Replace with something like "assign specified string to <Into Field>" + INTO: Added".
There might be an even better preset (no time to look for one now), but this one works fine. Ask questions about it in that thread.

You can use Folder Monitoring while making the changes and MediaMonkey may keep track of the file and thus its stats.
Note that MediaMonkey has various tools to rename files build in and this will prevent stats loss as well.

I think that you can use regex script and there was a direct SQL script which will allow you to change added.

Have you tried with http://www.yunqa.de/delphi/products/sqlitespy/ as it supports MM.DB thru extensions?
