I don't really see the difference, both terms seem to fit:

de⋅note
 1. to be a mark or sign of; indicate:

sep⋅a⋅rate
1. to keep apart or divide, as by an intervening barrier or space

Sorry, s/xxx/yyy/ is an idiom of writing, meaning substitute xxx with yyy - from a command in a very old editor program ;)

I, like nohitter, am a little lost on what you're asking for here. Are you suggesting that Denote be changed to Seperate in the description so it reads better, or with the "/", are you suggesting that be the default? *Scratches Head*
