Thank you for finding and reporting this bug. I was able to reproduce with the latest MM3.1 Beta Build and have now entered it into the Mantis Bug Tracking System as Bug#5273.

Drag and dropping files to folders in the composer node changes the artist field, not the composer field.
I'd really like to use MM to clean up composer information, but all I did was cause artist problems until I figured this out.
