I see. You are using the skinless version so unfortunately the "MediaMonkey (non-skinned).exe" was used instead of MediaMonkey.exe that I posted.
Therefore the symptoms are same as previous.

Nevertheless in the log I see that the AV occured while convertion these files:

No, the music has shown in most previous test. It is just the last test starting from empty without f_aac_codec.dll that the ipod appeared empty. I think it is a different problem.

I am unable to run further tests today as my pc is busy doing what it is supposed to rendering things. I did run one test but the debug log failed to save so I will have to wait until i can spare the time.

So If I understand correctly the issue is that (in all your tests?) the music isn't visible by the iPod?
I thought that it was just a consequence of the file conversions, but are you saying that that iPod has never seen the music synced by MediaMokney?
i.e. Even if you sync just several files then they are seen by MediaMonkey, but not by the iPod?

I cleared the ipod by selecting no files to sync and deleting all un-checked files.

I then ran a full sync with all cores enabled which ran fine for all 17000+ tracks but after ejecting the ipod it shows 'no music'

If i re-connect the ipod MM shows that it has all the tracks.

Yes, converting only on 1 CPU core takes long time and as I said this most probably isn't the issue (definetly not when the codec pack is uninstalled).
And also revising the f_aac_codec.dll shown that it should be thread safe.

Before the next test please replace you current MediaMonkey.exe (from 1827) by this one:

Without the codec extension (f_aac_codec.dll removed) there is no Access Violation so I guess the whole sync proceeded just fine, right?
Can you confirm?

In order to find which file causes the AV in f_aac_codec.dll previously we would need you to test with the codec extension again (f_aac_codec.dll) and the listed files in order to find a sample file that causes it. And ideally if you could share the sample file then with us. I will also ask colleague to compile and post build 1828 (with the sync stuck fix) and enhanced debug messaging.

I'm also now attempting a full sync with 1 of the 16 cores enabled for conversion and auto-conversion

FYI: We revised the plugin and it seems to be is thread safe so it looks that the AV is caused by a particular file, but because the conversion can run on 8 threads simultaneously (based on Options > Performance) then it can be a little bit tricky to pinpoint the particular file, in the debug log I see that a first AV occured while one of this files were converted:

It seems there is AV in f_aac_codec.dll when decoding multiple ALAC files at once (when auto-converting on multiple threads)

I entered the issue as

The terminated sync is consequence of this issue.
This will be fixed in 1828 (the sync won't stuck when there is an AV in the plugin) and proceeds with further plugins (and further files).

I've connected the ipod to a different USB socket on the back of the machine rather than the ones on the front of the case. clicked through several access violation errors early on then it ran well for 1400 track until it threw up an error and stopped. I then attempted to eject the ipod, this is the point at which I saved the debug report

But so far it looks that MM still has a trouble to get full write access (to the iTunesDB file) for some reason, because your posted iTunesDB has 39 MB, but the metadata for 8360 tracks resides only on the first 10 MB and the file should have only 10 MB, it looks like MM isn't allowed to do that.

EDIT: I wonder whether it could be an USB issue? Do you use USB HUB or something like that? Could you try another USB port and ensure that iTunesDB file is fully writeable before the sync?
