This feature will be available in Alpha 4.

In theme.mskn define

Toolbar\SubitemFont

As a one-state text object. This will define the menu items color.

There can be support for this in future, but sure not in first alpha. Also i have added your suggestion into my to-do list.

could someone please drop in some support for this so that the MM developers notice it. Or if the MM developers are reading please consider it..

currently, the only way to change the colour of the dropdown menu headers (eg. "File") is with "ToolItemTextNormal" (in FONTS).

however... when the dropdown rolls out, the text within it also follows the same colour. I would like these two colours to be split up so that, for example, the header section can be defined as white text on black and the drop down can be black text on white.
