In GOM player, there's a cool function where you can set a file to begin and end at a certain point. For example, you could set every track to begin after 30 seconds from the beginning or end 30 seconds from the end. Is this possible within MM?

Not now, but the developers have implemented it for the next release. Naturally your next question is, "when will the next release be available?", but no-one knows yet.
