As another user (ie not tech support person) I suggest the following:
First, with media monkey NOT running, use windows file explorer to locate your music files. If you display then using large icons, the icon should show the embedded artwork. However, I think this may in some cases be cached from previous viewings.
When you select a particular track, if it contains embedded artwork, windows will display it in the "Details" pane. This is more definitive, as it gets loaded from the track itself. Also, if your tracks are located in folders by album, you might have one single art file in that same folder, whic should be OK as well
If there is no artwork for the tracks in question, you could check if a track copied back from one of your synced or backup locations DOES have such artwork.
If you find a set of tracks that does contain the artwork, then I suggest making a backup copy of these on a portable drive or on the cloud so you don't lose any more, and of course copy them back into your music folder on the PC, if it is not there. Caution if you have used MM facility to downsample tracks when syncing, that you aren't copying back lower quality files.
Then next, I would go and download/install the latest beta copy of Mediamonkey, which has had quite a few bugfixes since the release version.

Then, look at the settings you might have for updating tags when editing properties.
