I've got the same issue. I'm using the latest build of MM (3.0.6.1190), latest version of iTunes (8.1), and firmware version 2.1 for my 16gb iPod touch.
I've managed to reproduce this issue several times with the following steps.
-Clear out all music from the iPod in MM, just selecting the iPod, selecting the music, and deleting. Exit MM, disconnect iPod.
-Load iTunes, connect iPod, adjust settings so that no MUSIC, APPS, PICS, VIDS, will be synched, manually manage what IS synched.
-Restore iPod, no backup, set up as new iPod, give the iPod the same name I always do.
-once restore is done and iPod reboots and iTunes is done working, eject iPod through iTunes, then disconnect. Exit iTunes.
-Load MM, connect iPod.
- I've tried this with a playlist of songs and individual songs one at a time, what happens is that one or two songs will appear as normal under cover flow, but right around the 3rd or 4th song that uses a different cover art (different artist, different album) I'll start seeing the errors. what ususally happens is that the album in the forefront is usually a garbled mix of surrounding album cover art (it's own and the albums to the left and/or right) while the two on each side look normal, BUT if I select one of the albums to the side and bring it to the forefront, IT looks garbled and the two albums (one left, one right) bordering look normal, even if one of them was messed up when I was focused on it.
I'm going to try to uninstall iTunes and MM and delete EVERYTHING associated with them, reboot, and do a fresh install of each to see if anything changes.
