OK, that worked.... Even though I had the latest OS installed, it allowed me to revert back to the original version OS. Once I did that, I saw all the colors.

I'm guessing this is an issue that is being worked on for the next release?

Define clean iPod... I wiped all my songs off it via iTunes before dropping new songs on it with MM. I'm experimenting with MM... Furthermore, I used iPod updater to update the OS on the iPod.
