I would like to be able to create my own genre and mood drop down list instead of populating with the genres in my tags.. is this possible?
EDIT:
I tag these 2 fields w/ data from AMG and they usually have multiple values, I want to be able to enter these multiple values so that an album can be multiple genres.
I then want to have just the singular genre tags available in advanced search.
Any hint on how to achieve this is appreciated.

I found a Microsoft Access document in the MediaMonkey Program Folder, when I open it I see a list of genres... but some genres which I'm pretty sure are in my database are not in this document.
Also, I was unable to locate the Mood database within the Access document.

No, MediaMonkey shows the genre's that are currently used by your music collection. Other than deleting the genre from your songs there is no way to remove genre's from the list.
You can use multiple values for genre's, just add ; between genre's like pop;rock;rap. This will list the song under each separated genre and the genre's will also be treated as individual genre's in the search.
The MS Access file is something that might be left over from MediaMonkey 2. MediaMonkey doesn't use MS Access anymore and instead uses SQLite.
