Is there a way to add a number of playlists to now playing and then see the now playing list? I seem to be able to select multiple playlists and then click the add button but cannot see the now playing list anywhere.

Is there any way to shuffle a playlist once it's been sync'd onto the device?

By "Is there any way to shuffle a playlist once it's been sync'd onto the device?" do you mean .. get to the album art image and tap it. There will be the shuffle icon and the repeat icon.

You're right. If there is already a track playing, then there's a Now Playing button below the browser; but if nothing is playing, even after adding tracks to the list, there's no link to Now Playing. And no way to start something playing, other than tapping something else to go.

Probably the best approach with this is to select one playlist, Play Now, select others, Play Last.
